Ingredients

1 cup cooked quinoa, cooled

1/2 cup cheddar cheese

1/2 cup parmesan cheese (extra for the top)

1 cup vegetables, steamed and chopped

1/2 tsp kosher salt

1/2 tsp black pepper

1 egg

 

Instructions:

1. Preheat your oven to 375F

2. Spray a mini muffin tin with olive oil and combine all of the ingredients in a bowl and mix thoroughly

3. Take 2 Tbsp of mixture and press firmly into a muffin cup and sprinkle some Parmesan on top of each

4. Bake for 15 mins or until golden brown and slightly crispy
