Wholesome nut free granola bars are hard to find. This recipe solve that issue all together. Feel free to mix up the dried fruit or add some seeds if you prefer. Great for kids' lunches!

Ingredients¾ cup firmly packed brown sugar 1 8oz container plain yogurt 2 large egg whites, lightly beaten 2 tbsp vegetable oil 2 tbsp milk or alternative of your choice 2 tsp vanilla 1½ cups all-purpose flour 1 tsp baking soda 1 tsp ground cinnamon ½ tsp salt 3 cups oats (quick or old fashioned, uncooked) 1 cup raisins or 1 cup dried cranberries |

Instructions:Heat oven to 350°F. In large bowl, combine sugar, yogurt, egg whites, oil, milk, and vanilla; mix well. In medium bowl, combine flour, baking soda, cinnamon, and salt; mix well. Add the dry mix to yogurt mixture; mix well and stir in oats and fruit. Spread dough onto bottom of ungreased 13"x9" baking pan. Bake 28-32 minutes or until light golden brown. Cool completely on wire rack and then cut into bars. |
