Servings: 12

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients

RAW CHOCOLATE

½ cup / 50 g cacao powder

3 tbsp maple syrup / date syrup

4 tbsp coconut oil

NUT BUTTER CENTRE

3 tbsp almond butter / peanut butter

2 tbsp maple syrup / date syrup

1 tsp vanilla extract

½ tsp sea salt

Instructions:

1. Melt the coconut oil in a double boiler / bain-marie (in a dish in hot water). You can use cacao butter if you prefer.

2. Mix together the cacao powder, with the coconut oil and 3 tbsp of maple syrup. Keep mixing until smooth and combined, don’t worry if it seems a bit grainy – it will taste smooth when it’s set.

3. Spoon half of the raw chocolate mixture into cup cases and place into the freezer.

4. Mix together everything for the nut butter centre until combed. You can use any nut butter that you like

5. Spoon the nut butter centre on top of the chocolate cup cases, they should be set after 10 mins in the freezer.

6. Spoon the rest of the chocolate on the nut butter and sprinkle with chopped nuts.

7. Place back in the freezer and the raw chocolate almond butter cups should be set in 10 mins. Enjoy immediately or store in the fridge and eat within a week.
