With its written use dating back over 500 years, Turkey Tail, or as it is known in China, Yun Zhi - ‘The Cloud Mushroom’ has been highly coveted by herbalists and foragers for its beneficial effects in health, food and textiles. Traditionally Turkey Tail, a bracket fungi, was consumed as a decocted tea - but it was also used in the dying of fabrics and basket weaving among several other important uses. Mild in flavour, Turkey tail can be used to flavour a variety of dishes and incorporates very well into many flavour combinations.
