Farmers is an unripened white cheese not unlike a mild Cheddar (though less crumbly) or like a Monterey Jack. It is rindless, semi-firm, slightly springy, and relatively young—essentially a drained and pressed dry cottage cheese. The easy-going flavour and agreeable melt make Farmers cheese a popular choice for cooking; it is often used as part of the filling for perogi, or to add a mellow cheese-y flavour to biscuits or breads.
